Summer Corn, Avocado and Black Bean Salad

I LOVE summer salads of all kinds, especially when avocados are involved!!  I made this deliciousness the other day!  We actually ate it as a meal but it's really more of a side dish or could even be a snack or appetizer.  You could serve it with chips, crackers or in a pita!

Summer Corn, Avocado and Black Bean Salad

Ingredients

*1 3/4 cup thawed frozen or fresh sweet corn
*40 grape tomatoes, halved
*1 15 oz can Organic black beans
*2 Avocados, diced
*1 Red onion, finely diced
*1/4 cup cilantro, chopped

Dressing
*2 TBSP Olive oil
*1 lemon, juiced 
*1-2 tsp ground black pepper
*1/2 tsp Sea salt
*1-2 tsp Cumin

Instructions
Prep all the veggies and add them to a large serving bowl.  Toss to combine.

In a small bowl or measuring cup, whisk together the dressing ingredients and pour over the veggies. Toss gently to coat evenly and let rest about 10 minutes.  

Store in the refrigerator and serve!  You can serve it by itself, with chips, or in a pita!
